My Favourite Banana Bread Recipe

Hey dolls,

First off, I just wanna say I hope you are all okay and staying safe in this crazy time we are currently living in. Sorry for missing a few weeks, I’ve been getting into lockdown routine and getting on with the last few assignments I have for uni.

But anyway, I thought I’d share my favourite banana bread recipe is everyone is baking banana bread and I’ve been using this one for years! It’s a firm favourite with my family and friends and is of course from the Hummingbird Bakery- my favourite books to bake from (with a couple of changes).

First up ingredients:

  • 250g light brown or caster sugar – whichever you have in the cupboard, I’ve also reduced the amount of sugar from the original recipe
  • 2 eggs
  • 2-3 mashed bananas  – depending on the size!
  • 280g plain flour
  • 1 teaspoon of each – baking powder, bicarbonate of soda, cinnamon and ginger
  • 140g of unsalted butter, melted
  • A loaf tin, greased and dusted with flour

Preheat your oven to 170 degrees.

Ok, now for the method:

  1. Beat the eggs and sugar together until  fluffy.
  2. Then beat in the mashed banana to the mixture
  3. In a separate bowl, mix together the dry ingredients.
  4. Add half the dry mix to the egg mixture and mix until combined
  5. Add in the other half and mix again. At this point the batter will be quite thick, don’t panic!
  6. Now pour in the melted butter and mix until all the ingredients are combined
  7. Pour the batter into the loaf tin.
  8. Pop into the oven and bake for around an hour, a knife or skewer should come out clean after being stuck in the cake when its cooked!

And that’s it! Super simple and so yummy, I love to toast the banana bread under the grill and top with a little bit of nutella!

What I eat in a day!

Hey dolls,

It can be hard to eat healthy when you have a super busy life, so I thought I’d share what I eat in a day! Obviously it varies but most days are similar to this! I also try to drink 2-3 litres of water a day.

Breakfast for me is so important, if I don’t start the day right it is unlikely my day will be productive. Breakfast can vary from scrambled eggs to overnight oats or my fave quick and easy yoghurt, fruit and granola. I love the Light & Free yoghurts, grab whatever fruit I have in the fridge or fruit bowl and top it with a handful of Jordan’s low sugar granola for a bit of crunch.

Lunch is always the meal I struggle with because I get bored of eating the same thing, throughout the winter I had soup pretty much everyday but now the sun is out salad season is back!

This is my absolute favourite salad (apart from your classic caesar!) and so simple. To make my Chicken Pesto salad I just fry some chicken in fry lite with salt and pepper, mix 1tsp of pesto with the same of light mayo, chop some cucumber, throw some salad leaves in a bowl and add a few croutons. I also needed to use up my strawberries so chopped them up with an apple for a sweet treat!

 

At work I always get peckish in the afternoon so have a range of snacks in my snack drawer from rice cakes to Fibre One bars! I recently discovered Fibre One popcorn bars and OMG they are amazing!

Cooking dinner is definitely my favourite meal, I love mixing different flavours. One of my go to meals is Soy, ginger and garlic salmon with brown rice and greens. Again the greens always change depending on what is in the fridge. Sometimes, I will make some extra and have the rest for lunch the next day!

What I Eat in a Day!

Hey Dolls,

This week I thought I would share with you what I eat in a day. This was a day I was at home so was very healthy but obviously my days vary!

Breakfast

Strawberry and Banana Smoothie

Weetabix with dried cranberries and skimmed milk

Snack

I had breakfast late so wasn’t hungry, instead I just had an Iced caramel latte. Usually I would have a mini graze box or a Fibre One bar.

Lunch

Crustless bacon and cheese quiche with salad (pesto mayo dressing)

Low calorie Raspberry Jelly

Dinner

Chicken and pancetta Ravioli with tomato pasta sauce

Garlic Pizza bread

Mango and Passionfruit sorbet

 

Throughout the day I drink water and try to drink 2-3 litres per day.
